Mickey Misses You!

We’re back! I can’t believe how fast our vacation flew by after I’d been planning it for two long years. We all had a blast on the Disney Fantasy and are already missing the fun times on board! I tried to cheer up my kiddos and welcome them back to school with a Mickey sandwich yesterday.

I picked up this cute new stamper at the Disney store at the Orlando airport (we had a long time there before we went home) and it definitely made the kids smile. They were very excited to tell their friends all about meeting Captain Mickey. Westley was particularly excited to tell everyone that “Mickey kissed me!”  The alleged Mickey smooch happened around 11pm on our last night and it was the perfect way to cap off a wonderful vacation!

I am still in the process of editing our trip photos and writing up our trip logs.  I made plenty of notes on Disney Cruise Line tips and tricks that I will share too.  I am hoping to publish this in a few parts over the next couple of weeks.  We’ve been on the Disney Magic and the Disney Fantasy, so I have a good idea of what both classes of ships are like and I’m glad to pass along some of the things I’ve learned.

For now, I am back to work and trying to play catch up and prepare for two very busy travel weeks.  Wish me luck!

The Bento Bloggers and Friends are celebrating World Animal Day today!  It is great timing for us because we were lucky enough to spend Saturday at Company Day (for my husband’s work) at Six Flags Great Adventure, which included a trip through their Wild Safari!  Wild Safari is like a zoo that you can drive through in your own car.  Some animals are still kept in pens, but many are free to wander through their section and even “visit” the humans!  We got to see many animals up close this way, and the highlights of these encounters was an Ostrich nibbling at leaves on our windshield and a giraffe that kicked our car after coming right up to our window!  Check out the ostrich attack below:

Girlie got an old iPhone (with no service) for her birthday recently.  She mostly wanted it for taking pictures, so she was thrilled to be able to bring her own camera to snap photos of the animals.  If you hear her saying “I got it!” in the video, she’s talking about the ostrich photo.  She took around 80 pictures in total and most were better than mine!  Our giraffe encounter was also hilarious, but the video came out funny because I turned the iPhone and at least half the video is sideways!  Ooops!

Well, you can guess that we have become quite obsessed with ostriches since we made our new friend.  We’ve done some wikipedia research to learn more about their natural habitats and answer our questions about what they eat.  The safari was a great learning experience for all of us and excellent inspiration for our World Animal Day bento!  Girlie and I worked together on this ostrich lunch:

Girlie had some great ideas on how to assemble an ostrich out of shapes.  We made a circle for the head and an oval for the body.  We used crusts from the SunButter and & Jam sandwiches to make the ostrich’s neck and legs and also the nest for the egg.  Girlie cut the cheese feathers for the head and placed those herself. She also “glued” on the candy eye with Sun Butter.  I did the feather shapes on the body and cut the beak and feet out of orange bell pepper.  We also included a giant ostrich egg.  For fruit, she has mango with pomegranate seeds.  Her veggies are carrots and sugar snap peas. We had a great time working together on this bento and I love how she comes up with some excellent and unique ideas!

Happy Birthday Bento!

My girlie turned 6 today.  What?? How?? Even though it feels like my life revolves around her and I have tried my best to take in every little moment, I still don’t understand how I could possibly have a 6 year-old in my life!  I know that this is a universal experience of time flying with your little ones, but I am just floored by it anyway.

We had a big BBQ party for her yesterday and there was a ton of leftovers.  To save time and ensure the leftovers were consumed, I packed the bento lunches as I put away the rest of the food.  I packed the kids in their Easy LunchBoxes and my husband got his Lock & Lock.

Here’s Girlie’s birthday BBQ bento:

She has this amazing pasta salad that my mom made with some cubes of white cheddar cheese.  I added picks to spell out the word SIX for her. I’ll have to do a proper six bento later this week, but this will have to do for now.  She was so exited to have a lunch made of “party food” as it was!  She has a fruit salad of pineapple, grapes, and strawberries and some veggies with low-fat ranch in a mini-dipper container.  This will be a healthy and filling lunch for her.

Little Dude’s lunch is similar. He has pasta salad, cheese and crackers, fruit salad, and 2 small slices of tomato pie.  I added some animal fork picks to give him a smile.

My husband got one compartment of the leftover burger toppings and a hamburger.  I threw some extra cauliflower in there too.  The other compartment has pasta salad, fruit salad, veggies, and ranch dip in a small heart container marked “XOXO.”

I was traveling the whole week prior to her party and did not have a lot of time to put together a big bash for her.  We decided on a simple BBQ, but it grew and grew until we ended up with around 50 guests!  Our plan was to have a Pinterest party and attempt some of the pins from our Birthday Parties board, but a lot of those got lost in the chaos of 17 kids running around like crazy!  The kids mostly played in the bounce house, beat up on the piñata, and did some arts and crafts I set out for them (painting and decorating building blocks and foam bookmarks).  The crafts were actually a huge hit and the kids were very creative with their projects.  I was impressed!

Some of the pins I had planned on never even got started.  I wanted to make these ice cream hearts and a star walkway to our backyard party.  I also wanted to do this simple trick with the water bottles.  I just did not have time leading up to or during the party.

We did try to explode watermelons, but all the big ones were gone and it didn’t seem like it was going to work on the tiny ones we found, so we abandoned that too.  I think the only pin we successfully re-created was the terra-cotta-pot-s’mores.  Here is a picture of Girlie with the man she has identified has “the love of her life” making s’mores together:

All the kids had fun with that and the scramble for candy was intense!  Finally, here is a picture of my beautiful girlie basking in the glow of the Happy Birthday song:

Aaaaaah! I love how much she grows and changes, but I get very sentimental at birthday time.  I just could not keep my cool when I tucked her in last night, knowing she’d never be 5 again.  Of course, she hugged me and told me not to be sad and that she will always be my baby no matter how old she gets.  And she will.  But not like this.  Not like she is right now.  Sigh.  Oh well, I did sign up for this roller coaster!

She was so gracious at her party and tried to look after her guests and her little brother to make sure everyone was having fun. She loved opening all of her presents and even though we did so privately, she still oooohed and aaahed and exclaimed over each one and made sure take time to appreciate it all.  We take a picture of her with each present to include in thank you notes.  It adds a personal touch and we know the kids like to see their friend enjoying the present.

Girlie also loves passing out goodie bags at parties and this year was no exception.  The only change was that I picked up favors at Daiso Japan while I was in San Francisco last week.  I bought this huge stash of bento supplies and put together bento boxes for each kid:

I did not get a picture of the individual favor boxes, but they each had a yellow or pink 2-tier bento box, a cookie cutter, a fork and spoon set, and 2 bento picks.  I tied them with ribbon and attached a paper that explained our love of Pinterest and my profile name if they wanted to follow me or see more bento ideas.  The kids seemed pretty excited.  I hope they like them!  It was not a toy like they probably expected, but hopefully this will get used or at least not be stepped on by a parent at 2am.

And as soon as our guests were out the door and gifts were opened, I got right back to work on making the Madagascar 3 Afro Polka Dot Circus Cupcakes my girlie specifically requested for her school birthday treat!  We usually do rice krispy treats, but this  was what she really wanted.  The look of the kids faces when they saw them was priceless, they were laughing as they remembered Marty’s song and dance from the most recent movie. Thanks again to BentOnBetterLunches for that great idea!  These are easy to make and consistently come out great!

Do you go nuts over parties like I do?  This was a “small and low-key” party for me and it was still a ton of people and a lot of work.  Girlie actually asked me for something for her birthday gift and I said “NO! This party is your gift!”  She accepted it pretty easily, which helped my cause.  I’d love to say that next year’s party will be smaller, but I know me and I can’t help myself.  If you have any advice on managing this issue, please send me your suggestion! I need help!

Our family has just completed our very first East Coast beach vacation!  The timing is fitting because we’re celebrating our one year anniversary of our big, cross-country move and the kids are between camp and school right now.  We teamed up with some awesome friends to spend a few days together in Bethany Beach, DE.  We loved the beach and the pool.  We also loved the kids club!  How nice to get a break from the kids so the adults could relax a bit too!

The kids club ran from 10 to 2 daily and required a “bag lunch” for each child enrolled.  One of the things I love about my style of packing lunch is that I minimize waste.  I’d prefer that my kids not make a single trip to the trash can, so I send them with their own utensils and cloth napkins. I want them to re-use as much as possible.  We talk a lot about the 3 R’s and how we can make better choices to Reduce, Re-use, and Recycle. I thought this beach trip would be a great exercise to demonstrate a way to re-purpose something that could otherwise end up in a landfill.

I was inspired by a few of my bento blogger friends’ field trip lunches earlier this year and planned ahead to save plastic containers when I purchased strawberries and blueberries from the supermarket.  I also saved a plastic egg tray for poolside snacks.  I found that Nick Jr. has a spot on their site where you can make personalized labels with your child’s favorite characters and print them from your home’s printer. Armed with some plastic containers, scrap paper (I printed on the reverse side of my kids’ daily camp reports), and some extra cupcake liners, I set out to make a couple of cute disposable bento lunches.   I am pleased to report that they were a hit!

This bento had a goldfish bread PB&J, orange bell pepper strips, half a banana, a juice box, a cheese stick, and a package of Annie’s Organic bunny grahams.

This bento had a goldfish jelly sandwich, orange bell peppers, a pluot, a frozen Capri Sun (which acts as ice pack while it defrosts), a babybel cheese, a small pack of M&Ms, and a package of Annie’s Organic bunny grahams.

 

Fun, right?  It was easy too and just took a few minutes.  I did rely more on convenience foods than I would for my regular packing, but I was very pleased with these lunches I made with minimal supplies on hand.

And this will not earn me many adult fans, but check out my complete junk-food pool party snack tray:

Kid dream/parent nightmare! Peanut M&Ms, Candy Fish, Popcorn, Gummy Worms, and Skittles. Heinous junk food, but in small portions and shared among 5 kids who had very healthy lunches!

This was a 24-egg carton that I turned into a feast of candy and popcorn to the delight of the 5 kids in our group.  Luckily they had plenty of time to burn off all that candy-crazed wildness with swimming and other pool tricks.  Girlie is a fabulous swimmer after a month of camp and spent all her time in the deep end without any floaties.  She could even jump in and swim underwater pretty easily. I was so impressed with her improvement this year!

Girlie and I took a trip to NYC last weekend to go see Mary Poppins on Broadway!  She’s taking musical theater this summer and has been begging to go see a real Broadway show, and I really wanted to go up to the city and visit my cousin Kelsey, so I bought us all tickets and we made a day of it.  We watched the movie to get a feeling for the story (Girlie kept getting the plot mixed up with Nanny McPhee) and discussed our exciting transportation plans, which included an hour-long train ride and a riding in a real NYC taxi cab!

Once we arrived at Penn Station, we met up with Kelsey and toured Rockefeller Plaza, the Lego store, and FAO Schwarz.  After lunch we saw the show, hung outside the stage door for autographs, and then did some more shopping in Times Square.   Girlie has been to Vegas and was not nearly as impressed with Time Square as the Vegas Strip!  However, she did enjoy the super-sized Disney store and the 3-story M&M store too!  We cabbed it back to Penn Station and then picked up some goodies from a bakery there and had a picnic on the train back home.  It was a great day.  According to my Girlie, her favorite parts of the adventure were (in this order):

  1. Spending Time with Kelsey
  2. Seeing Mary Poppins!!!
  3. Meeting Iron Man (her fave superhero), Spidey, and Captain America at FAO Shwarz!

In honor of our trip, I made Girlie a Mary Poppins Lunch.  We obnoxiously sang show-tunes while I assembled it this morning!  Her two favorite songs are ‘Spoonful of Sugar’ and ‘Practically Perfect’. Here is her EasyLunchBox today:

I tried to make a cheese Mary Poppins with her umbrella and some M&M rain.  We bought a big bag of all different colored M&Ms at the huge store in NYC.  I gave her an actual spoonful of sugar (yes her teachers are sure to thank me later), strawberries, and grapes.

Little Dude has a Star Wars lunch today with a Tie Fighter sandwich that I decorated with food markers.  He’s got grapes, strawberries and yogurt.  He got a peek at his lunch this morning and was so excited… He kept saying “My Sandwich!”  He wanted it right away, but he’ll be excited to see it again at lunchtime!

Well, I thought I’d have plenty of time to create non-bento posts while I was traveling last week and I was wrong! I was kept very busy on my CA business trip and did not have time to write posts on the topics I wanted to cover.  One of the things I wanted to write about was our recent trip to the Reading Terminal Market in Philadelphia.   My husband, my mom, and I took the kids there a couple of weeks ago via the Septa Train!  My son, who is about to turn 3, is fascinated by trains and we knew he’d be thrilled to ride a real one again.  As we stepped onto the platform and looked at the tracks and waited for the train to arrive, his excitement was contagious! You can see it in this picture taken just as the train started moving:

When we arrived at the market, we took a long walk around to see what vendors were open (it was a Sunday) and what we’d like to have for lunch. Then we treated the kids to some incredible ice cream before making a couple of purchases to take home with us.  After the market, we took a quick stroll through Chinatown, where we found a Sanrio store.  It was not as well-equipped as I had hoped, but they did have one cute set of Hello Kitty containers that we picked up for bento lunch. Once we’d had enough, we hopped back on the train and enjoyed the trip back, too! It was so nice not to have to drive and the kids LOVED having their tickets punched by the conductor.  It was so much fun.

The kids’ lunches are the same today, but in different container formats.  They have crackers, cheese, ham, sugar snap peas, strawberries, blueberries, and yogurt.  I think the new Hello Kitty containers are going to be too much fuss for frequent use… 8 pieces is a bit much for me!  They are super cute though, and it made Girlie’s day to design and assemble each container.   I love when she packs her own lunch and makes such healthy selections. It really makes me feel good.  Oh, and if you’re reading this Katie, when I asked Girlie if she knew how to get a lot of shapes cut out of one slice of cheese, she looked at me like I was nuts and said “Of course I do! Grandma taught me how to use cookie cutters at Christmas!” She did a great job too!

At the time that my kids are actually consuming this lunch, I’ll be on a plane, about to land in San Francisco!  I don’t travel for work very often in general, but somehow this is my 3rd big trip of the year already!  It is a big trip for me because it is my first time traveling at my new job (I’m a Salesforce consultant for Great Wave Tech) and I’ll finally meet my new boss and the rest of the team in person!  Also, I am being given a huge project and this marks the start of my work as an Engagement Manager.

Girlie was so sad when I kissed her goodnight and I knew I’d be gone before she woke on the morning, so I wanted to leave her with an extra lovey EasyLunchBox:

Both kids have a heart-shaped ham and cheese sandwich, heart cups full of trail mix, and heart-punched babybel cheese.  They have strawberries and yellow peaches in the fruit compartment.  Girlie has orange and red bell peppers in the small compartment and Little Dude has yogurt in his. It is a sweet way to send my love while I am away.

I’ll have some blog posts while I am out, but they will definitely be the ‘random’ variety instead of bento!  I’ll be back on the regular schedule on Monday, May 14.  Also, I just learned that my kids’ summer camp provides their lunches!  I’ll need to think about what content to provide during those weeks and what frequency I want to post.  I’d love to hear your suggestions!

They have ham and cheese crescent roll sandwiches that my mom made for them, babybel cheese with starts cut into them, popcorn with craisins, strawberries and blue berries, and Little Dude has yogurt, where Girlie has cucumber and tomato.  This lunch was very simple and took just a few minutes to assemble. I know it will be their favorite for this week!

I’m in Washington D.C. today, attending a Salesforce event.  Cloudforce is on tour and I am lucky enough to be attending for the second time this year.  Luckily I am able to take the train and avoid traffic! Any Pennsylvania or New Jersey people want to explain a travel riddle to me?  I live in PA, and the most convenient Amtrak station for me is in Trenton, NJ.  My friend lives in southern NJ and the most convenient station for him is 30th Street in Philadelphia, PA.  How are we switching states to get on the same train.  It is mind boggling!

Do you attend professional events regularly?  I do and I think they are very helpful for training and networking.  Hope you’re having a great week!

Today’s lunch was inspired by the bakery-fresh challah loaf I purchased at Penn Station yesterday morning.  I couldn’t resist it and wondered if the kids would love it as much as I do.  They both loved the taste they had yesterday, so I decided to use the bread to make a cream cheese and jelly sandwich for their EasyLunchBoxes today:

I sliced the bread nice and thick too!  I hope they love it.  They also have goldfish and raisins in the main compartment and Strawberries in the fruit compartment.  Girlie has cucumbers and grape tomatoes in the small compartment and Little Dude has yogurt (as usual). I really talked up the special Challah bread to Girlie (we didn’t bring home souvenirs), so I wonder if she’ll brag to her friends that her Challah is fresh from NYC!

Our weekend trip to New York City was really fun.  I managed to keep the entire trip a surprise from my husband.  He knew that we were going somewhere and that he needed 2 casual outfits and one that was a little nicer.  He knew were were going overnight.  That’s about it.  It helped that my mom misled him to think that we were going to New Jersey. He probably expected a night in Atlantic City or something like that. Well, we did go to New Jersey, but just to the train station!  Then we took a 75 minute ride up to New York and emerged from Penn Station, straight into the hustle and bustle of one of the world’s best cities!

After checking into the hotel, we wandered around a little and grabbed a quick bite to eat before hustling off to Broadway to see a show!  Then we walked back to the hotel (in the pouring rain!), changed, and grabbed a late-night snack and some cocktails in the hotel lounge. I was find so enjoy some live music and just relax.  We stayed at a pretty nice hotel this time too!  We slept late the next morning, grabbed breakfast at a teeny tiny diner, and headed back home on the train.  It was a great trip and we really had fun together.   It is so nice that we now live close enough to my parents that they can watch the kids for the weekend and the kids are thrilled to go there! THANKS MOM!

Hey, check out the address bar at the top of your browser!  I have moved to my own domain, www.rachelsrandom.com, in preparation for the new Cooking with Trader Joe’s cookbook my lunchboxes will be featured in!

I am not generally a big fan of cookbooks, but I own several of the Cooking with Trader Joe’s line because they are easy to use and feature ingredients that I have access to at my favorite grocery store.  They have beautiful pictures and great recipe ideas.  I purchased their “Pack a Lunch” volume when I first embarked on this crazy lunchbox journey of mine and I am thrilled that my recipes (and my family) will be featured in their EasyLunchBoxes book at the end of the summer.

I don’t know yet which of my recipe submissions will be published, but I have official word that something will be included.  I also have submitted my bio and had Rachel Beck out this morning to take some family pictures.  Rachel is a very talented photographer that I met at my brother’s wedding last year.  She works great with the kids and takes beautiful shots of anyone in any situation. I am excited that she was able to come out for the cookbook photos today.

There is still work to be done to be ready for the book, but a lot of progress has been made.  I expect I’ll work on making the site a little more professional looking for the summer release and I’ll have to keep coming out with lots of great creative lunches to showcase on this blog.  I think my next page to develop is a gallery.  I have a lot of thoughts and not a lot of time to implement.
