PB&J Airplane Sandwiches

We are on day 4 of girlie making strictly vegetarian choices. I can see a re-planning of lunches is in order to give both kids some extra variety in their lunchboxes.  They both love eggs and beans. I am thinking I could maybe make some cold pasta or quinoa salads that would work nicely for both of them.  For today, they are getting airplane PB&J using a transportation lunch punch sandwich cutter and their EasyLunchBoxes:

They both have sandwiches, cheddar cheese, and apples.  Girlie has carrots and ranch dip.  Little Dude has yogurt.  This is a very simple lunch that obviously took only a few minutes to put together, but is made from healthy foods and produces very little waste.  There are no wrappers and nothing to throw away.  I’ve even been sending the kids with cloth napkins and silverware to school in my crazy attempt to not have them produce any lunchtime waste.  It does seem to be having an effect on Girlie, who has been commenting more about not wasting things because it hurts our Earth.

What is your simplest go-to lunch to pack?  This one was a real no-brainer.  I’d love to have a few more like these that I can produce in 5 minutes but still have looking cute!
